Cookies are always a tasty little treat to have. They’re easier to make than a cake and fun to shape and add almost anything you can think of to make them even more perfect. I would say you could see them as somewhat of a comfort food. Cookies are sweet, crunchy, soft, gooey, and a great dessert (or as a guilty little snack ;)).
However, most cookies contain a lot of extra sugar and ingredients that really don’t bode well for us (we’re looking at you partially and hydrogenated oils…). You want something that not only tastes good, but something you won’t feel necessarily guilty for having several afterwards. That’s why we created Chocolate Oat Protein Cookies for the month of January. We figured this month would be about aiding many of you in your quest for a healthier you by creating various food items that would not only be on the healthier side, but the more filling side as well.
Don’t get us wrong, Valentine’s Day is coming up and let’s be honest – it would be very difficult to not indulge around that time of year. After all, to us it’s really the unofficial chocolate day. So be sure to look out for some goodies next month.
But for now, let’s keep on course with starting out this year with wholesome choices. So grab your scoop and protein powder and let’s roll!
Ingredients You Will Need:
• 1 cup Old-Fashioned Oats, Blended Into Flour
• 1 cup White Whole Wheat Flour, Leveled
• 1 Scoop Vanilla Whey Protein Powder (We use Optimum Nutrition 100% Whey Protein Vanilla Ice Cream)
• 1 Scoop Chocolate Whey Protein
• 6 tablespoons Egg Whites (We go back and forth with brands but we always purchase the carton of liquid egg whites)
• ¼ cup Extra Virgin Olive Oil
• 2 ½ tsp Baking Powder (we use Rumford Aluminum Free)
• ½ cup Light Brown Sugar
• ¼ teaspoon Salt
• 1 tsp Vanilla Extract
• Measuring Spoons
• Large Mixing Bowl
• Medium Mixing Bowl
• Blender or Food Processor
• Dry Measuring Cups
• Large Plastic Mixing Spoon
• Liquid Measuring Cup
• Flat Spatula
• Baking Sheet
Preheat oven to 350 degrees Fahrenheit.
This recipe made 30 cookies for us.
Depending on how big or small you form them will result in either fewer or more.
Begin by blending your oats into a flour. Pour into your medium mixing bowl. Measure out your white whole wheat flour and scoop out one scoop of each protein powder and combine with the oats. Do the same for the salt and baking powder and set aside.
In the large mixing bowl, combine the egg whites, brown sugar, olive oil, and vanilla extract. Mix until combined.
Add in the oat and flour mixture into the egg and sugar mixture and mix until a dough begins to form.
After that, take your hands and continue mixing the dough together until all ingredients are mixed.
Pull off small pieces of dough to form circular shapes about 1-1½ inches in diameter. Do this until all the dough is gone or until you have filled your baking sheet. You don’t need to place these cookies too far apart as they won’t spread.
Bake for 7-10 minutes.
Allow them to cool for 5-10 minutes and then you can enjoy as a sweet snack or set aside for dessert option later on. Feel free to change the recipe up by incorporating different flavored protein and even extract. This way you can tailor it to your taste.
