There’s really nothing better than a good, soft cookie. Cakes are good, brownies too, but sometimes a cookie just hits the spot. Crunchy cookies are good as well but, it can get annoying with the crumbs that fall especially when you start to realize that those crumbs are part of that delicious treat and now they’re on the floor. Then there’s the flavor—I know many who would say their go-to cookie is a chocolate chip cookie or even just a plain sugar cookie with sprinkles in it.
This is how these cookies came about. I honestly woke up one morning and was thinking about this type of baked good and really just wanted something that was fresh, light, but enough sweetness that all of the flavors just sang together. So the idea of a white chocolate orange cookie popped into my head! They just sounded so good that I immediately began putting together a recipe.
Now if you have read any of my other posts, you know that I love chocolate—it’s my guilty pleasure after all. However, I normally don’t go for white chocolate. I find that it can be too sweet and even leaning towards an artificial taste sometimes. But for whatever reason, this recipe demanded that it be white chocolate. It just was a perfect match for orange. So of course I used the Ghirardelli white chocolate bar (the 4 ounce one) since I find their chocolate to always be a great brand to use.
I must tell you, these bad boys barely stayed on the plate. After trying one, I think my family and I consumed two more each. These cookies are incredible! They truly are light, the flavors just blend, and the cookies are soft and not crumbly. You will need to exercise some serious control when these are near you. I am telling you right now, you will most likely need to make a double batch of theses and since summer is just right around the corner, these are great cookies to add to any family barbecue or summer themed event you might have brewing.
- 2 ½ cups all-purpose unbleached flour
- ½ cup light brown sugar
- 2 eggs
- 1 stick unsalted butter, room temperature
- 1 tsp baking soda
- 1 tsp vanilla bean paste
- 1 tsp freshly squeezed orange juice (about one orange slice)
- ½ tsp salt
- Zest from a whole orange
- 1 Ghirardelli white chocolate bar
Preheat oven to 350 degrees Fahrenheit.
In a stand mixer, beat on low-medium speed the sugar and butter until well combined. Add in eggs, one at a time, mixing well each time. Add in the zest, orange juice, and vanilla bean paste and mix until well combined.
In a separate bowl, combine the flour, salt, and baking soda and mix. Break apart the white chocolate into small pieces. Add into the egg, sugar, and butter mixture and mix together on low-medium speed until a dough forms. Once the dough has formed, pull pieces off by hand to form cookies about 2 inches wide. Place on baking sheet.
Bake for 10-15 minutes or until just lightly golden brown on edges.
Allow to cool on a baking sheet and once cooled, enjoy until your heart is content!
