I just have to say, I love blueberries. Not only do they have so many health benefits, they’re refreshing, sweet, and perfect in just about everything. I don’t know how you eat this berry, but for me they go in cereal, muffins, breads, on top of ice cream, in frostings, cookies…hehehe…really just about everything. When summer ends and this berry no longer is in season, it’s really almost depressing. Lately muffins have been on the mind to make and eat. I don’t know what it is about muffins but, for whatever reason, they’re just so good to have anytime. They’re incredibly easy to make and the variety you can make is endless. It’s that time of year again where spring has sprung upon us and Easter is right on our doorstep! It’s an exciting time of year for these reasons but also because the days are getting longer and the weather warmer.
Now, spring is one of our favorite times of year because we truly enjoy the colors that awaken with spring. Easter is also our grandmother’s favorite holiday and because of this, it’s such a wonderful way to use such colors in these baked goods to brighten up her day.
Lemon and coconut are usually popular items and coupling for this holiday so we wanted to share with you our creation with this combination. Usually you see complex or over the top concoctions but we wanted to do something simple and elegant, just the way spring is. So we decided to make a lemon cake with a lemon frosting and coconut topping. Let us tell you, this is a cake everyone will enjoy. Continue reading
