With the warm weather lately (and at times sweltering), the first thing I always look for is something cool to eat.  Sometimes it will be ice cream, other times it could be a popsicle.  Either way, the need to cool down is the priority.  For me, I’m particular with certain flavors too.  I feel like some just make you feel thirstier while others don’t quite hit the spot.  For whatever reason though, mint really hits the spot.  It already has a cool tinge to it plus it just tastes great with the right combo of flavors. Peanut Butter and Chocolate Muffins

So this time, since I’m on a roll with muffins right now, I wanted to do something that is not only a candy (I’m looking at you Reese’s cups) but also a favorite in just about any other form.  See, I really love chocolate but my second love (and perhaps even a tie) is peanut butter.  I have to say, when I was younger (and even occasionally now) I couldn’t get enough of peanut butter.  It just had the right amount of salty flavor and when you got the chunky peanut butter and combined with fluff, oh!  There was nothing like it! Chocolate Covered Cherry Muffins

To continue with my dessert themed muffins, I wanted to do another chocolate covered treat that’s pretty popular.  When I think of chocolate covered cherries, the first thought that usually comes to mind is the Queen Anne’s candy cherries in the syrup/cream mixture.  Growing up they were always a favorite candy in my home, especially around Christmas time.  They were so sweet and incredibly tasty, which is probably why they always went so fast.
